Sodexo to host first Localvore Cooking Challenge at Norwich University

In celebration of Sodexo’s ongoing commitment to Vermont First local food sourcing, eight Vermont colleges will compete in a Localvore Cooking Challenge hosted by Norwich University on Wednesday, April 3, from 11:30 a.m. to 1:30 p.m. This friendly competition challenges professional and up-and-coming Sodexo chefs to create dishes around foods and products that are native to Vermont. Each campus culinary team will prepare and serve their local dishes to students during the special lunch at Norwich University and students get to vote on their favorite dish. The culinary teams will also be judged on presentation, creativity, technical execution, and guest interaction by guest judges from the Vermont food community. 

The judges this year are: Michael Kloeti, Chef/owner of Michael’s on the Hill; Anson Tebbetts, Secretary of Agriculture for the State of Vermont; Mary Roux, Manager of Contracted and Auxiliary Services for Norwich University; and a yet to be named area Sodexo chef.

The goal of the Localvore Cooking Challenge is to highlight fresh, local ingredients and promote local farmers and vendors. It provides students with an opportunity to learn about the benefits of local products while enjoying delicious food. The event is open to the public, and members of the press are welcome to attend.

Last year Sodexo spent $271,056 or 8.9% of food purchases local from over 63 local producers serving over 3,400 meals per day at Norwich.

“Norwich is very excited to be hosting this wonderful event as it highlights both Sodexo’s and Norwich’s commitment to supporting local products,” Roux said.

Competing colleges include:

·         Castleton University – Castleton, Vt.

·         Champlain College – Burlington, Vt.

·         NVU - Johnson – Johnson, Vt.

·         NVU – Lyndon – Lyndonville, Vt.

·         Norwich University – Northfield, Vt.

·         Saint Michael’s College – Colchester, Vt.

·         University of Vermont – Burlington, Vt.

·         Vermont Tech – Randolph Center, Vt.

The program aims to increase the purchasing of local products by developing partnerships with growers and other suppliers throughout the state. ·         Duo of Vermont Pork with Whistle Pig Rye Whisky Glaze featuring meats from Black River and Rutland Beef works

·         Black Knight Chocolate Brownie Sundae featuring Queen City Brewery’s Black Knight’s Russian Stout and Wilcox Dairy Vanilla Bean Ice cream

·         Korean BBQ VT Braised Brisket Sliders from Boyden Farms

·         Street Style Maple Chipotle Chicken Tacos with Misty Knoll Farms chicken and Cabot cheeses

·         Whiskey Glazed Chicken Wings and Cheddar Ale Mac & Cheese with Grafton cheddar and Fiddle Head Ale
