Hilton Burlington Lake Champlain, soon to be Hotel Champlain, has appointed Kevin Sprouse as executive chef and Marina Cook as general manager at the Original Skiff Fish + Oyster restaurant, which will operate inside the hotel beginning this summer. Both formerly worked together at Philo Ridge Farm in Charlotte.
Sprouse and Cook bring to their new roles a combined 45 years' experience in the food service industry. Sprouse's skillset includes innovative culinary strategy and skilled menu development. Cook has both front-of-house and back-of-house expertise and has developed drink menus in five different countries.
“We are incredibly lucky to have two amazing staff members joining our team here at Original Skiff," said General Manager Justin Chapman. “We’ve already been able to see their hard work and dedication to this restaurant, and we can’t wait to show the community and those who visit Vermont the best new seafood around.”
